I would like to play around with the fonts of the city and country name files.
Would that be possible?

Hello Lucas, and welcome to the forums!
You can certainly change the fonts of those files. A complete description of how to do that is in Appendix F of the user’s manual.
You can find the fonts that are available to you from the Help menu, Available Fonts… menu item. It is the PostScript name of the font that you use in the style declaration in typesetting databases. Here is an example (sorry for the poor formatting):
